I might be missing something but I'm not sure about this. Do we have to play everyone best 3 of 5 battles or something? I noticed that we had to report our score of 3-0 (as an example)and I was unsure what the score actually is. Or is it how many pokemon you have left after one battle?

The score is how many pokemon the winner has left. For example, if a player wins and has 5 Pokemon left, the score was 5-0.
Play each opponent in your group one time and report the results =)
